I do a lot of this kind of photography with pocket wizards. The main difference I shoot manual but the principles are similar and this is one of the more useful videos I have viewed on the subject. In the video, the off camera flash units are Canon Speedlights, but it could be studio lights as well. The video uses Canon Ettl but the same principle applies to Ittl for Nikon. For manual shooting, a similar setup, except you use your f/stop to dial in the correct exposure and your shutter speed to set the amount of ambient light you want.
Two lights are just as easy if you know what you want. Setting the lighting is a matter of taste and with speedlights you can do this in your living room, garage, or on your patio.
